Avocado and Bean Spread

Something that continually frustrates me at the grocery store is the lack of gluten free dips in the deli section. There’s a handful that are vegan, but none that are both vegan and gluten free. So I’ve been experimenting with different combinations of ingredients to find something I like that wasn’t simply “mashed avocado”.

Here’s something I’ve put together that goes great on toast, rice cakes, or as a dip for your crackers or chips of choice!

Ingredients:

  • 1 can of butter beans (~400g)
  • Flesh of 1 ripe avocado
  • Cajun spice mix, to taste
  • Cayenne pepper, to taste

Method:

  • Drain the liquid from the can of butter beans, you don’t need it
  • Put everything in a food processor and mix until smooth
  • EAT!

I like my food spicy in general, so you may want to skip the cayenne pepper and just use the cajun spice mix instead.

Seriously, it’s awesome!
